They'll Eat It: Yogurt Poppy Slaw

Don't tell me your kid won't eat vegetables. This sweet Summer slaw slys in the good stuff like cabbage and carrots, leaving your little ones none the wiser. This recipe also presents a GREAT opportunity to introduce your munchkins to the food processor if you have one. They'll LOVE feeding fruit and veggies in to be shredded. Otherwise, you can spend a few minutes doing the knife work and then let them toss things into a bowl and have a blast mixing it all up!

You'll Need:

3 cups green cabbage
1/2 cup red cabbage
1 medium Granny Smith apple
1/4 cup coarsely shredded carrots
3/4 cup plain low-fat yogurt 
1/3 cup canned crushed pineapple
1 tbs honey
3/4 tsp curry powder
1 tbs poppy seeds
 salt and pepper

You'll Do:

Shred the cabbage, apples, and carrots then toss them together. In a separate bowl, mix the yogurt, pineapple, honey, curry powder and poppy seeds together adding sprinkles of salt and pepper to taste. Pour this dressing over the veggie combo, stirring to coat. Refrigerate for a couple of hours then EAT! You can also try shredding broccoli in place of cabbage. Sneaky, sneaky! Thanks for the recipe, Delish
